Marinara Sauce

4 tablespoons olive oil
2 (28 ounce) cans whole tomatoes (Drain tomatoes, save liquid, chop tomatoes in food processor for coarse chop or dice)
4 to 6 garlic cloves (peeled and minced)
2 tablespoons chopped fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 pinch Salt (optional)
1 pinch pepper (optional)

Heat a large skillet/fry pan on high heat until hot, add olive oil, lower to medium high heat. When oil is hot add garlic, tomato liquid, parsley, basil, oregano, salt/pepper (optional), stir and allow to simmer covered for 20 minutes, stirring occasionally. When sauce is ready hold at 155 F until use.
